Chocolate serves many purposes. Let's see...

  1. When you're sad somehow chocolate makes everything better

  2. When you're moody, chocolate mellows you

  3. When you need a friend, chocolate is right there by your side

Just to name a few :)

Okay, so now on to how these chocolate brownies will make your life 10x better. Well... they are gooey, chocolatey, have that bite from the chocolate chip, and they are absolutely delectable.

To give an idea of how big these brownies are, they were made in an 8x8 pan and cut into 9 pieces. Another idea for these is that you can order these as a brownie cake! Who says you can ONLY have a cookie cake? What about the brownie cake for the chocolate lovers?!?

This recipe is great because I don't use an electric mixer, the clean up is rather easy and to follow is rather easy. To start off the brownies, instead of creaming together room temperature butter and sugar with a paddle attachment, like you would with a cookie cake; I warm up butter AND sugar in the microwave for a quick 30-45 seconds. This is to just warm up the butter and contribute to the fudginess of the brownie. When it comes out of the microwave, you can then mix together the butter and sugar until it has a smooth consistency. Trust me, this definitely helps with the "gooeyness".

Aside from the way the butter and sugar is "creamed", the rest of the process is normal. Which means, we add in the eggs with vanilla extract. I know sometimes I like to add almond extract, but for some reason, I did not like the way it tasted in these brownies. It tended to overpower the chocolate aftertaste and the chocolate aftertaste is one of the greatest things about these brownies.

Finally, when it comes to adding in the chocolate chips, at this specific time, I used mini chocolate chips because that is what I had in the fridge. But, next time, I would really love to use the chocolate chunks. I feel like it was hold better for appearance and texture.

Plus, with chocolate chunks, you can snack in between ;)

I bake these until a toothpick/fork comes out clean. Now, this can be a bit tricky because since the chocolate chips will be melted, it may appear on the toothpick. Another trick I use is just jiggle the pan, I know "jiggling" is very professional, but it works! So anyway, I jiggle it, and if it seems still, I remove it from the oven and set on the countertop to cool.

As always, keep in mind that these may harden and cook slightly more once removed from the oven.

For serving purposes, I sliced in 9 pieces. You can serve these in so many different variations. The greatest and "funnest" part of these, is decorating! Because they are brownies and fudgy and gooey, you can really do anything you want. In the pictures and video you see, I just melted some chocolate and drizzled it on. But, you can pipe the chocolate on the edges, add a rose in the upper corner, you can write on them, you can really do anything.

In the upcoming weeks, I will attempt making a chocolate brownie cookie and share the results of those lovely delights :)
