Eggnog Sugar Cookie Bars

It's time for the holiday cheer! The holidays, for me, are all about:
Family
Faith
Sugar cookies
Candy canes
Eggnog!
Eggnog is such a great little treat. It's creamy, a little spicy, and you know the holiday season is here when you see it in the grocery store. The first treat for this holiday season is EGGNOG SUGAR COOKIE BARS!
These sugar cookie bars are really so tasty and a great take on sugar cookies. To make these bars, you just need:
Eggnog, of course!
Flour
Eggs
Sugar
Butter, softened
Baking powder
Rum extract
The way these bars are made, it does not make the rum extract overwhelming. Instead, it is settle with the eggnog and you have just a hint of the taste because the eggnog icing is the real sweet treat that ties it all together.
Using an electric mixer, with the paddle attachment, combine the ingredients until smooth. Once smooth, depending on the quantity, take a brownie pan and pan down the batter into the pan. This is how we create the bars.

Then, bake at 350 degrees for 12-15 minutes. It is so important not to overcook these. Even though the tops may not look cooked, take a toothpick and stick it in the middle to see if the batter comes back clean.
I know it will smell so delicious and you'll want to take it near your Christmas tree, but just let it cool. It will be so important because the batter will just melt on top of it.
As it cools, you can start making the icing. The icing is just buttercream frosting with eggnog and rum extract. So you will need:
Butter
Powdered Sugar
Eggnog (instead of milk)
Rum extract
Whip these together and top each bar with a generous amount. Don't be shy! It's the holiday season, we only do this once a year! (Right?!)
In my pictures, I didn't top it with sprinkles because I simply forgot them and didn't realize it. But, top the sugar cookie bars with holiday themed sprinkles and some edible glitter for a snow like look. It'll look like a winter wonderland cookie.
