Summer Berry Banana Popsicles

Let's picture a summer day in July - hot weather, kids playing around fire hydrants, adults running into the ocean all to stay cool. Ice cream trucks drive by with the instrumental music to draw up attention to buy an ice cream bar.


There is not denial - ice cream is amazing. Especially with rainbow sprinkles. But, sometimes on these hot days, you just want something that will by hydrating and satisfying.


That is where these Summer Berry Banana Pops come in! It's a healthy, whole ingredient popsicle that is both hydrating and tasty. The best part, with the ingredients used to make this amazing afternoon treat, it does not melt easily in the heat, so it will last longer for you to indulge.


In these pops, we start with a small amount milk, just enough to give it a liquid consistency to pour into the popsicle molds. This could be any type of plant milk or regular milk. To balance the milk and offer the creamy texture, Greek yogurt is used. Because we use Greek Yogurt, this popsicle also offers protein. Using equal parts milk and Greek yogurt creates the creaminess that makes it satisfying.


Whole fruit and frozen fruit is personal preference for these. Personally, I prefer whole fruit because frozen fruit can still defrost which adds water to the popsicle that I don't really like. Plus, you're freezing the popsicle anyway, so there is really no need to use frozen fruit.


These popsicles use fresh strawberries and bananas with honey or maple syrup as the sweetener. Once you have all you need, the ingredients are blended together and should have a thicker consistency than a smoothie. It should have the consistency like those yogurt bowls.


Now, the fun part! With a funnel or a piping bag, the mixture will be poured into the silicone popsicle molds. Just be careful not to overfill the molds because the clean up is not fun! No clean up is, really.


The color of these popsicles are gorgeous. They are almost like a pastel pink and the seeds from the strawberry add an aesthetic look.

Now, freeze for at least 8 hours and enjoy! Pack them in a cooler to head to the beach or enjoy one of these outside on the sidewalk or by the pool while kids are outside enjoying the heat.


These will be sure to fulfill a sweet tooth and a need for a cool treat!
