The Vanessa Cookie

A co-worker shared these cookies with a friend and called them "The Vanessa Cookie". The name kind of...just stuck!
So without further ado, I introduce to you The Vanessa Cookie to Cafe Nessa! The Vanessa Cookie is unique in three ways:
It is larger than your regular cookie
The goal is for the inside of the cookie to have a more "edible dough" texture
It is a shareable cookie
Add a glass of milk, and cookies of any kind are anyone's guilty pleasure. These cookies are so fun to make because they are different. They're bold, soft, delicious, and deceiving. By looking at them, you would think it was more of a cookie cake, but the way these cookies are baked, they do have a thickness that is abnormal for a cookie, but it does not lose its texture on the inside.
In fact, the texture on the inside is almost like a "you have eat it to see it" moment. The inside is so soft that it tastes like edible dough. This post won't even do it justice.
Each piece of cookie is 1/3 cup of batter versus the normal size of a cookie. Each cookie has chocolate chips in each bite because I use mini chocolate chips instead of the normal sized chips to make sure of this.
This recipe has your normal ingredients - flour, sugar, baking soda, baking powder. The difference is how much baking soda and baking powder; and the size of the batter for each cookie.
Now, when I bake this cookie, I bake it at the normal 350 degrees; but it obviously will longer. The way I get them to have that "edible dough" texture inside is because I take them out of the oven before it gets completely settled. When the cookies cool on a cooling tray, it cooks and settles more. Pulling them out right before you would a normal cookie makes all the difference.

Let me tell you a secret ...
... When I was testing this recipe, I shared it with friends, family, and co-workers. When they ate it, they said, "Oh, wow! This is amazing!" The next day when I went back to work, they said, "Where are the cookies?!"
They're big cookies, but they're addicting, chocolatey, and soft. You WILL want to share these with a friend because how can you not smile when enjoying these lovely cookies?!
